Malabar Iftar Special Nombu Kanji/Jeeraka Kanji- Healthy Rice Soup -Recipe no 160


Ingredients
Rice -1/4cup
Water-
Salt-
Turmeric Powder-1/2tsp
Coriander Powder-1/2tsp
Fenugreek Powder-1/2tsp
Coconut-4tbsp
Small onion-2
Cumin seeds-3/4tsp
Ashaali/cress seeds-1tsp
Seasoning
Ghee-1tsp
Small onion-2
Method
Soak rice for 20 minutes and wash well..
In a cooker add rice along with all powders and water and cook for one whistle in medium flame ..
When the pressure releases open the cooker ..
Grind coconut along with cumin and shallots to fine paste..
Add this paste into the cooked rice along with extra water..
Cook for 5 minutes ..
Add salt and cress seeds ..(opt)
Finally season with small onions
So tasty healthy Jeeraka Kanji is ready to serve
